After taking his first steps at the Villa Maïa, Maxime Lebossé learned the art of cocktails at the Florian, a bar in Vieux Lyon, and then at the Groom, with its more festive club atmosphere.

Each time, he mixes passion and ambition in creations that are as original as they are balanced. 

At Fleur de Loire, the young barman of Loir-et-Chéri origin, returns to the sources and roots of taste, determined to develop an evolving menu, inspired by the seasons and garden produce.

Expanding the cocktail to new horizons by bringing it closer to the pulsations of nature in Blois, Tagette, Lavender, citrus, redcurrant, Maxime likes to play with tastes, textures and colours to participate in the overall signature of Fleur de Loire.
