Maxime Maniez, Fleur de Loire ’s pastry chef, is the creative force behind this first galette along with his teams. It has been designed in a teardrop shape, evoking the Loire river which winds its way past the property.

The Îlot d’Amande is made with delicious inverted puff pastry which is generously filled with frangipane: an unmissable gourmet treat for January.

Fans of tradition can opt for a double layer of frangipane: a classic almond layer and a second layer featuring roasted and caramelised hazelnut praline. An almond syrup provides the perfect finishing touch to this dessert.
